oxidation

As a general rule, oxygen and wine don't mix. While some contact is not a problem, prolonged exposure to oxygen can cause negative changes in the color and bouquet of wine. If you are going to store an already opened bottle of wine, it is recommended that you infuse the bottle with an inert gas or else use a device to remove the oxygen from the bottle.
